Honey is not created or manufactured in a facility. It occurs naturally in one of the world’s most efficient factories: the beehive. Bees may travel as far as 8000km and visit more than four million flowers to gather enough nectar to make just one kilogram of honey.

To prepare modern mead, honey is dissolved in water in proper proportions, the must is fermented in stainless steel tanks in the maximum hygiene, for the time needed to reach the desired alcohol content, to be used only high-quality local honey produced by hand. Follows the operation of fining, to obtain a product sufficiently clear, and the step of aging in the vats, following which it is ready to be bottled.
The mead today was prepared following methods derived from the techniques of wine making as alcoholic beverage gradation between 8 °Alc. and 17 °Alc. instead what will clearly not make anyone confusing it with the wine is its starting matrix that is Honey.
